This caprese orzo pesto salad is a treat for your taste buds. Serve as a light dinner or a simple side dish with just about anything. It also is a great addition to any backyard BBQ or for a potluck.
Ingredients
- 0.25 cups basil pesto , store bought or homemade
- 1 small lemon , juiced
- 1 tablespoon extra virgin olive oil
- 2 teaspoons balsamic vinegar
- salt and freshly ground black pepper , to taste

Combine pesto, lemon juice, olive oil, and balsamic vinegar in a small bowl. Stir until well combined, season with salt and pepper, and set dressing aside.

Bring a medium pot of salted water to a boil. Add orzo, and cook until tender yet still firm to the bite, 8 to 10 minutes. Drain pasta, and transfer to a medium bowl.

Stir dressing into pasta, and allow it to sit for 5 to 10 minutes to allow flavors meld.

Gently fold in tomatoes, mozzarella, cucumbers, and peas.
