If you enjoy huevos rancheros, you will love Chef John's baked eggs recipe. The spicy sauce mingles with just barely set eggs in a similar way, and when you start scooping this up with toasted chunks of bread, it gets borderline magical.
Ingredients
- 0.33 cups marinara sauce
- 1.5 teaspoons chopped fresh flat-leaf parsley
- 0.5 teaspoons red pepper flakes
- salt and freshly ground black pepper to taste
- 2 eggs
- 1 tablespoon finely grated Parmigiano-Reggiano cheese
- 2 teaspoons olive oil
- 2 tablespoons heavy cream
- 2 slices toast
Instructions
-
1
Preheat the oven to 400 degrees F (200 degrees C).
-
2
Spread marinara sauce in the bottom of a small baking dish, about 1/4-inch high. Sprinkle with parsley, red pepper flakes, salt, and black pepper. Make a narrow well in center of sauce for eggs.
-
3
Crack each egg into a separate ramekin; gently pour into the well in the sauce.
-
4
Sprinkle with Parmigiano-Reggiano cheese, then drizzle with olive oil, followed by cream; season with salt and black pepper.
-
5
Bake in the preheated oven until yolks are just set, 10 to 12 minutes. Serve with toast.

Salmon Deviled Eggs with Homemade Mayonnaise
This is a recipe my mother, who is French, has used for years. It is awesome and easy. A delicious twist on the traditional deviled eggs.
Crispy Honey Sriracha Chicken Wings
These glazed honey sriracha wings are quite delicious and incredibly simple, but the sauce is merely an afterthought here. The real star of the show is the strange, but effective technique of coating the wings with a baking powder-laced spice rub before baking. Through the magic of chemical reactions, the surface of the chicken becomes bone-dry, and eventually crisps up to something very similar to what would come out of a deep fryer.
Kaiserschmarren – Austrian Torn Pancakes
Kaiserschmarren ("Emperor's Mess") is a light and fluffy pancake made without baking powder. This dish is named after Austrian Kaiser Franz Joseph I who liked his pancakes torn into small pieces. Serve with fruit preserves or applesauce.
