Crispy corn fritters! Nothing warms up a cool night like a plateful of these old-time treats. I make them with canned corn, but you can use frozen corn, or fresh corn kernels cut off the cob. Dig in, they're delicious!
Ingredients
- 3 cups oil for frying
- 1 cup sifted all-purpose flour
- 1 teaspoon baking powder
- 0.5 teaspoons salt
- 0.25 teaspoons white sugar
- 1 large egg , lightly beaten
- 0.5 cups milk
- 1 tablespoon shortening , melted
- 1 , 12 ounce

Gather all ingredients and heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).

Combine flour, baking powder, salt, and sugar in a medium bowl. Beat egg, milk, and melted shortening together in a small bowl. Stir egg mixture into flour mixture. Stir in corn.

Working in batches, drop fritter batter by spoonfuls into the hot oil. Fry until golden.

Remove fritters with a slotted spoon and drain on paper towels.

Fizzy Lifting Drink
After scouring the Internet in search of an extra-special cocktail for our Willy Wonka-themed backyard movie party, it became apparent that I would have to step into my cocktail laboratory and invent my own. After many back-breaking hours spent calibrating specimens which were analyzed by my friends, I came up with this recipe that I'm confident even Willy Wonka himself would be proud to call The Fizzy Lifting Drink. Warning: This drink may cause mischievous behavior.
Air-Fried Butter Cake
This is a basic butter cake; the trickiest bit was finding a cake tin to fit in the air fryer. I went with a ring tin, which works really well and makes it cook even quicker. Top with confectioners' sugar.
