This cornbread tastes like the corn cakes from a famous Mexican restaurant chain. Use an ice cream scoop to serve.
Ingredients
- 1 can whole kernel corn , 15 ounce
- 1 can cream-style corn , 14.75 ounce
- 2 eggs
- 1 package dry corn bread mix , 8 ounce
- 1 cup sour cream
- 8 ounces Cheddar cheese , shredded

Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking pan.

In a large mixing bowl, combine corn, reserved liquid, eggs, corn bread mix and sour cream; stir until blended. Pour batter into prepared pan; sprinkle with cheese.

Bake in preheated oven for 30 minutes, until golden brown.

Pina Colada Cake (Hybrid Pineapple Upside-Down Cake)
This is a hybrid pineapple upside-down cake which I've developed over the years. Instead of pineapple rings, I use crushed pineapple, coconut, and honey. It is very important to cool the mixture of butter and brown sugar before covering it with the rest of the ingredients, preventing the layer of pineapple and the cake mix from mixing prematurely. Makes one 9x13 baking pan.
