Whole Rice and Lentils (Majadara)
One of my 'Israeli' recipes that I've adapted for whole rice (that in my opinion needs more seasoning). Good as a whole meal or as a side dish. Freezes fairly well, too.
Ziti with Roasted Zucchini and Garlic
Roasting the zucchini and garlic takes a little bit of time, but changes everything about this ziti recipe! It's well worth the wait.
Green Gazpacho
Serve cold, no-cook gazpacho made from honeydew melon, cucumber, and avocado as a starter, or as part of a light meal when it's just too hot to cook.
