A back-to-basics version of a classic chicken cacciatore recipe. Chicken meat simmered with garlic, onion, green bell pepper, tomatoes, beans, and oregano. This recipe can easily be doubled. Serve over cooked noodles or rice, if desired.
Ingredients
- 0.33 cups chopped onion
- 0.33 cups chopped green bell pepper
- 1 clove garlic , chopped
- 0.75 pounds chicken meat , cooked and cubed
- 0.5 cups whole peeled tomatoes
- 0.5 cups green beans
- 0.25 teaspoons dried oregano

Sauté onion, bell pepper, and garlic in a large skillet until soft. Add chicken, then stir in tomatoes, beans, and oregano.

Reduce heat to medium-low and simmer, stirring constantly, for 8 to 10 minutes. Remove from heat and serve hot.

In Germany, the filling for this classic cake (called Käsesahnetorte) is made with quark but quark is not easy to find in the U.S. and quite pricey. I use Greek yogurt instead, and it tastes just the like the original. The cake needs to set for at least 4 hours in the fridge, and it tastes better on the second day, so I always make it the day before serving.
