Easy funnel cake recipe very similar to pancakes.
Ingredients
- 1 egg
- 0.67 cups milk
- 0.25 teaspoons salt
- 2 tablespoons white sugar
- 1.33 cups sifted all-purpose flour
- 0.75 teaspoons baking powder
- 1 quart vegetable oil for frying
- 0.25 cups confectioners' sugar for dusting

Pour 1-inch-deep oil into a heavy pan; heat to 375 degrees F (190 degrees C).

Beat together egg and milk in a large bowl. Sift flour, salt, sugar, and baking powder into the bowl; beat into egg mixture until smooth.

Pour batter through a funnel over hot oil with a circular motion to form a spiral. Fry in hot oil until bottom is golden brown; flip and continue cooking until golden brown all over. Drain on paper towels. Continue cooking remaining batter.

Sprinkle cakes with confectioner's sugar while still warm.

Cucumber Tomato Salad with Zucchini and Black Olives in Lemon Balsamic Vinaigrette
This zucchini salad is a deliciously light and fresh-tasting twist on cucumber tomato salad. It takes me to the water's edge and begs to be served with fresh seafood. Substitute Greek Kalamata olives for black olives if desired.
Quick and Easy Salad Dressing
This is my favorite dressing of all time and I usually make a largish batch and store in the fridge - it is sweet and sharp and tastes especially great with bitter greens. The trick is to finely grate the garlic (I use a Microplane®) plus the secret ingredient, maple syrup. I like my dressings sweet, but just use less maple syrup if you like your dressings more tart.
