This easy hash recipe can be scaled to feed any number of people. I use it when it's just my daughter and me home for dinner.
Ingredients
- 1 tablespoon vegetable oil
- 8 ounces bulk Italian sausage
- 1 potato , peeled and diced
- ¼ onion , chopped
- 1 cup frozen mixed vegetables
- salt and pepper to taste
- 0.25 cups shredded Cheddar cheese

Heat oil in a large skillet over medium heat. Cook and stir sausage in hot oil until crumbly and just slightly pink, about 5 minutes. Add potato and onion; cook, stirring occasionally, until potatoes are tender and lightly browned, 10 to 15 minutes.

Stir in frozen vegetables and cook until heated through. Season with salt and pepper. Sprinkle with Cheddar cheese to serve.
