These easy pork tacos with pineapple salsa feature well-seasoned ground pork with black beans and a quick fresh pineapple salsa. Serve on flour tortillas with an optional topping of shredded cabbage.
Ingredients
- 1 cup pineapple
- 0.25 cups red onion
- 3 tablespoons chopped cilantro
- 1 jalapeno
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- 1.25 teaspoons kosher salt
- 1 pound ground pork
- 1.5 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon onion powder
- 0.25 teaspoons pepper
- 1 can diced tomatoes and green chiles , 10 ounce
- 1 can black beans , 15 ounce
- 8 flours tortillas , 6 inch
- shredded cabbage , optional

Combine pineapple, red onion, cilantro, jalapeno, lime juice, olive oil, and 1/4 teaspoon salt in a bowl and stir well, set aside.

Heat a large skillet over medium-high heat. Add pork and press to flatten. Cook, undisturbed, about 4 minutes or until browned. Flip and continue to cook, crumbling with a spoon until no longer pink. Season with remaining salt, chili powder, cumin, onion powder, and black pepper and cook 1 minute, stirring constantly.

Stir in tomatoes and beans and bring to a simmer. Cook 5 minutes, stirring occasionally; remove from heat.

Heat tortillas as desired. Divide pork mixture evenly among the tortillas and top with pineapple salsa and shredded cabbage if desired.

LaWanna's Mango Salsa on Tilapia Fillets
A delicious fruity salsa topping to serve over fish or chicken, from a friend in Florida. I always use whatever that I have left in a mixed greens salad the next day. Use any kind of fish -- I use tilapia or salmon. The fish may also be grilled, which is what I prefer. If I can't find a good fresh pineapple, I will use canned pineapple tidbits.
Fresh Fruit with Poppy Seed Dressing
Any fruit can be used, but this is my favorite combination. Try your own creation, but if you wish to use oranges and grapes in the same recipes, DON'T add the oranges until ready to serve or the grapes will be extremely bitter.
