These are like inside-out chocolate chip muffins. The generous amount of white chocolate makes them satisfying for those who have a sweet tooth, but the cocoa helps to balance the sweetness. Warning: They are seriously addictive!

Spelt Biscuits
I have made these biscuits for health nuts and non healthy eaters alike, but there are never leftovers. These are heavier on account of the spelt flour, but the nutty whole grain flavor is divine. Best when served fresh out of the oven, eaten with butter and honey or jam.
Clam Sauce with Linguine
This is a super fast and easy recipe. One of my favorites. Even my kids love it. Though sometimes I use 1 1/2 pounds of noodles. Fettuccine can also be used. Tastes even better with fresh baked rolls or French bread and a garden salad. For the special occasion have a nice glass of red wine with it.
Potato Casserole (Funeral Potatoes)
This creamy potato casserole (funeral potatoes) recipe is bursting with great flavors — perfect for breakfast carry-ins, potluck dinners, and more. Use the basic recipe and add your own touches. I love to add diced ham. Many people in my area call these funeral potatoes because they are a dish usually brought to family gatherings after the death of a family member. I am not fond of this name!
