Like an American meatloaf, this Pinoy pork dish is very easy to prepare. This Filipino meatloaf can be made ahead of time, especially when expecting company.
Ingredients
- 1.5 pounds ground pork
- 1 , 12 ounce
- 2 , 4 ounce
- 2 tablespoons chopped sweet pickle
- 1 , 1.5 ounce
- 3 eggs , beaten
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoons soy sauce , or to taste
- 1 tablespoon cornstarch

Preheat the oven to 350 degrees F (175 degrees C).

Mix together ground pork, luncheon meat, chorizo de Bilbao, pickle, raisin, eggs, salt, and pepper in a large bowl. Form mixture into 2 logs and wrap with aluminum foil. Place wrapped logs in a baking dish.

Bake in the preheated oven for 1 hour. Set meatloaves aside to rest.

Carefully drain drippings from the baking dish into a small saucepan; place over medium heat. Stir soy sauce and cornstarch into drippings; bring to a boil. Cook and stir mixture at a boil until sauce is thick, 5 to 7 minutes.

Unwrap meatloaves and slice; serve sauce over sliced meatloaf.

Cornbread Dressing With Gravy
A family-favorite holiday side with gravy for the dressing! My dad's mother made an old-fashioned cornbread dressing with gravy from scratch, without canned or boxed ingredients. She taught my mom, who passed this version on to me. I believe people came to my mom's house for Thanksgiving and Christmas for this one dish! This big-batch version does use cornbread mix, condensed soups, and bagged stuffing for convenience, but everyone asks for the recipe when I bring it along to a holiday potluck because they tell me how much it reminds them of the old-fashioned dressing their grandmothers used to make. Add more traditional stuffing spices as desired.
Mango Cilantro Slaw
This mango cilantro slaw features a different twist on cabbage coleslaw. It's very easy, and the mango and honey make it sweet; there is no sugar in this recipe! It's delicious on its own, or wrap a corn tortilla around grilled tilapia and top with this cilantro slaw for a great-tasting fish taco. For a thicker dressing, you can add additional mayonnaise.
