Fry an egg, melt the cheese, and warm your tortilla all in the same pan. Add your favorite toppings–like salsa, jalapeño pepper slices, cilantro, and green onions–and enjoy a great tasting breakfast, done in a flash. Of course, you can repeat, as many times as you like, if you have company.
Ingredients
- 2 teaspoons butter
- 1 large egg
- 0.25 teaspoons taco seasoning , or to taste
- 1.5 ounces shredded Cheddar cheese , divided
- 1 flour tortilla , 6 to 7-inch

In a 10-inch nonstick skillet, melt butter over medium heat, and swirl the pan to coat the bottom evenly.

Carefully break egg into buttered skillet and cook until egg white is opaque and egg is firm enough to turn, about 1 minute.

Turn egg over, being careful not to break yolk; sprinkle with taco seasoning and about half of cheese.

Gently place tortilla over egg and cheese, and cook about 1 minute. Using a silicone egg turner, flip the egg and tortilla, as one.

Sprinkle remaining cheese on top of the egg, and continue cooking until the egg is done to your liking and the tortilla is warm and toasty, about 2 minutes.

Slide tortilla and egg to a serving plate and serve warm.

Texas BBQ Beef Ribs
Beef short ribs, or "dino ribs" as they are called, are the new hot item in Texas and one of my favorite things to smoke right now. Beef short ribs are from the short plate before the 10th rib and have more meat than back or finger ribs. The famous Louie Mueller Barbecue in Taylor, Texas popularized beef ribs in response to Aaron Franklin's "Best Brisket on the Planet" designation. Each one can weigh 1 to 2 pounds. They are rich in flavor and a lot of times better than brisket. Yes I said it.
Best BBQ Chicken
BBQ chicken stays moist and tender when grilled slowly over indirect heat and basted with homemade BBQ sauce towards the end of the cooking time. Coating the chicken legs with a rub before grilling makes them taste great!
Georgia's Tennessee Jam Cake
This jam cake recipe was developed by my grandmother and is a tradition in our house over Christmas. The ingredients were originally authentic: homemade jam, buttermilk out of the churn, and walnuts you gather and crack yourself. Now, we use purchased items, but the cake is just as good. Frost with homemade caramel frosting or your favorite cream cheese frosting.
