When I made this garlic mashed cauliflower, my husband told me that he sampled some of the "potatoes" while they were still in the skillet, and he said they were really good! So, next time you want to sneak in a vegetable, instead of mashed potatoes, try this for your family dinner table. I won't tell!
Ingredients
- 2 tablespoons unsalted butter
- 1 tablespoon minced garlic
- 2 pounds riced cauliflower
- 1 teaspoon salt
- 0.25 teaspoons ground black pepper
- 1 pinch nutmeg
- 0.5 cups chicken broth
- 1 tablespoon chives
Instructions
-
1
Melt butter in a large skillet, over medium heat. Add minced garlic and cook until fragrant, about 30 seconds.
-
2
Stir in thawed, riced cauliflower, salt, pepper, and nutmeg. Add chicken broth and bring to a boil, stirring frequently.
-
3
Cook, covered, about 8 minutes, then remove cover and continue cooking and stirring until most of the liquid evaporates, an additional 5 to 8 minutes.
-
4
Use an immersion blender to purée cauliflower until smooth. If an immersion blender is not available, spoon cauliflower into a blender to purée. When smooth, place in a serving bowl and garnish with snipped chives.

Cold Russian Borscht
A simple cold borscht recipe. Can you say delicious?
Pork and Century Egg Rice Congee
This traditional Chinese breakfast rice porridge is filling, cheap, warming, and oh so good. I like my rice well broken down and therefore use a short-grain rice and a longer cooking time. I hope you enjoy! Serve hot in small bowls, garnished with a drop of oyster sauce, chopped scallion greens, and small slices of yau ja gwai (fried chinese bread stick, or chinese crullers).
Goat Cheese-Stuffed Lamb Burgers
These herb-studded lamb burgers come with a surprise inside: a pocket of creamy goat cheese. For a tender burger, mix the lamb and seasonings until just combined and gently shape the patties. Add some pickled red onions for a bright accent.
