Gerry's cobbler recipe is from my Aunt Gerry and was used by my mother for many years. Works with other fruits as well.
Ingredients
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 0.25 teaspoons salt
- 1 cup white sugar , divided
- 0.25 cups butter
- 0.5 cups milk
- 2 cups fresh blackberries
- 0.5 cups blackberry juice

Preheat the oven to 375 degrees F (190 degrees C). Grease a 9-inch square baking dish.

Whisk flour, baking powder, and salt together in a bowl; set aside. Beat ½ cup sugar and butter together in a separate bowl until smooth; stir in flour mixture, alternating with milk, until well combined.

Pour batter into the prepared baking dish. Spoon blackberries and blackberry juice on top; sprinkle with remaining ½ cup sugar.

Bake in the preheated oven until a toothpick inserted into center comes out clean, about 45 minutes.

Potatoes are coated in a spicy mixture of corn flour and Cajun seasoning then deep fried until crispy. Very simple and really crunchy. I like mine extra spicy so I soak my cut potatoes in hot sauce for a few seconds before shaking them in the dry batter.
