Ingredients
- 1.5 cups water
- 0.5 cups almond milk
- 1 cup quick-cooking oats
- 0.25 cups cane sugar
- 1 pinch Himalayan pink salt
- 1 large egg
- 0.5 cups gluten-free all purpose baking flour
- 0.25 cups olive oil , or as needed

Bring water to a boil in a pot; reduce heat to low. Add almond milk and stir in oats. Add sugar, stirring vigorously. Stir in salt. Continue to simmer until oats have reached your desired consistency, 3 to 5 minutes. Remove from heat and let cool, 15 to 20 minutes.

Transfer oats to a lidded container, cover, and chill in a refrigerator, 30 minutes to 2 hours.

Whisk egg in a small bowl. Place gluten-free flour in a separate bowl.

Scoop chilled oatmeal into medium-size balls.

Heat oil in a skillet over medium-high heat.

Place oatmeal balls into egg wash until completely covered. Place in flour; cover entirely. Use a slotted spoon to remove floured oatmeal balls; shake off excess flour.

Place oatmeal balls into the hot oil and cook until golden brown, 3 to 4 minutes on each side.

Olive Puffs
These puff pastry-wrapped olives are our family's favorite holiday appetizer. We make them with a variety of olives - pimento stuffed green, plump kalamata, Provencal - just make sure they are pitted. We like to use strongly flavored olives; the flavor of canned ripe olives disappears in the puff pastry. You can make these ahead, and freeze; allow 30 minutes for the pastry to thaw before baking. Another advantage: the kids like to make them and eat them.
Spelt Flour Bread Machine Challah
I got a challah recipe from my husband and tweaked it to use spelt flour. This recipe makes a beautiful 2-pound braided challah. I like to divide the dough in 3; make two loaves and one little roll. I like to try different toppings each time I make this recipe, such as sesame seeds, dried onion flakes, granulated garlic, kosher salt, or flax seeds.
Cuban Inspired Millet
