Grilling butternut squash in slices creates a crispy shell and seals in all the flavor. You don't even need butter or salt and pepper — great on its own, in salads, or as a side.
Ingredients
- 1 butternut squash , sliced into rounds and seeded
- 1 teaspoon olive oil
Instructions
-
1
Preheat an outdoor grill for medium heat and lightly oil the grate.
-
2
Brush both sides of butternut squash slices with olive oil.
-
3
Cook squash on the pre-heated grill, flipping as needed, until softened and browned, 15 to 20 minutes.

This is a fast, delicious weeknight dinner. Use any flavor of hummus that you prefer, but spicy works well for me. Serve with a side of rice.

This black-eyed pea gumbo is a wintertime favorite at our house. We always have it for New Year's Day while we watch football! Serve with a tossed salad and cornbread.
