Delicious and cheesy but definitely NOT low fat! The onion and mustard make this fish in cream sauce seductively flavorful.
Ingredients
- 2 pounds haddock fillets
- 1 teaspoon salt
- 0.13 teaspoons ground black pepper
- 3 tablespoons butter
- 0.25 cups minced onion
- 3 tablespoons all-purpose flour
- 1 teaspoon ground dry mustard
- 0.5 teaspoons salt
- 0.67 cups heavy cream
- 0.67 cups half-and-half cream
- 0.5 cups shredded sharp Cheddar cheese
- 0.5 cups shredded Monterey Jack cheese
- 0.25 teaspoons paprika

Preheat oven to 350 degrees F (175 degrees C). Lightly butter a medium or large baking dish.

Rinse and dry fillets. Season with 1 teaspoon salt and 1/8 teaspoon pepper.

In a skillet or frying pan, melt butter over medium heat. Saute onion in butter until golden. Stir in flour until completely incorporated. Stir in mustard, 1/2 teaspoon salt, light and heavy creams. Cook until thickened, stirring constantly. Remove from heat and stir in cheeses. Pour sauce over fish and sprinkle with paprika.

Bake in preheated oven for 30 minutes, until brown and bubbly.

Cream Cheese Fruit Dip
A cream cheese fruit dip that's loved by all (unless they're counting calories)! You can substitute reduced-fat cream cheese if you wish. It's been my favorite since it was shared with me in college. Enjoy with apples, bananas, oranges, pears, pineapple, strawberries, etc.
Double-Ranch Pizza with Chicken and Bacon
This pizza is fast to make when using rotisserie chicken, and prepared pizza dough. For an even quicker preparation use already cooked bacon crumbles. I cook my pizza in a cast iron skillet for a slight crunch to my dough. Serve with a small salad if desired.
