Here's a special-occasion roast enhanced with classic seasonings. Roasting two large ends of tenderloin instead of one whole piece ensures even cooking. (The meat needs to be coated with its aromatic rub, then chilled for at least six hours before roasting.)
Ingredients
- 2 tablespoons fresh rosemary
- 2 tablespoons fresh thyme leaves
- 2 bays leaves
- 4 cloves garlic
- 1 large shallot , peeled and quartered
- 1 tablespoon grated orange zest
- 1 tablespoon coarse salt
- 1 teaspoon freshly ground black pepper
- 0.5 teaspoons ground nutmeg
- 0.25 teaspoons ground cloves
- 2 tablespoons olive oil
- 2 beefs tenderloin roasts , 2 pound
Instructions
-
1
In a food processor, combine rosemary, thyme, bay leaves, garlic, shallot, orange zest, salt, pepper, nutmeg, and cloves. Run machine while adding oil; process until smooth. Spread mixture evenly over all sides of tenderloins. Place beef in a large glass baking dish. Cover with foil, and refrigerate for at least 6 hours.
-
2
Preheat oven to 400 degrees F (200 degrees C). Place tenderloins on a rack in a large roasting pan.
-
3
Roast beef in preheated oven until meat thermometer registers 140 degrees when inserted into center of beef, about 35 minutes. Remove from oven, and cover loosely with foil; let stand for 10 minutes. Slice beef, and serve.

Corned Beef and Cabbage Shepherd's Pie
This is a combination of my favorite corned beef and cabbage recipe, and my favorite shepherd's pie recipe. It involves a few extra steps when compared to your traditional boiled beef dinner, but the payoff at the end is well worth the extra effort. By layering the ingredients in a casserole dish, each serving has the perfect proportions of beef, cabbage, carrots, and potatoes.
Easy Chicken Pozole
This easy chicken pozole recipe is one of many great Mexican Christmas traditions, or simply delicious whenever you want to eat something warm and comforting. Garnish with thinly sliced radishes, shredded lettuce, finely chopped onion, chopped cilantro, and lime wedges, if you like.
Aunt Carol's Spinach and Fish Bake
Simple, easy fish recipe. Any white fish will do! And even the kids will eat up the spinach! (My four year old loves this dish!) This recipe was passed on by my Aunt and was a little bit of this, a little bit of that - so tweak the ingredients to your liking!
