Big V's Slow-Cooker Pulled Pork
A wonderfully easy, exceptionally tender pulled pork recipe. The meat literally falls off the bone and the marinade adds an excellent flavor that can complement any BBQ sauce. This recipe is great if you're looking for a make-ahead meal. Pulled pork is great served on fresh baked rolls or pita bread with sharp Cheddar cheese and coleslaw. You can serve the pork as is or mix in your favorite BBQ sauce.
Enchiladas Verdes
Delicious enchiladas verdes with homemade spicy tomatillo sauce. I got this recipe from an amazing cook from Puebla and it is the best I've ever tried! I've been perfecting it for over 15 years and realized it was time to share it when my foodie friends tried to drink the sauce out of the saucepan. Be conservative with the Mexican crema and cotija cheese.
Spicy Pressure Cooker Short Ribs
Cooking ribs in the pressure cooker is an easy and fast way to put food on your plate. The heat from this dish is countered very nicely with the sweetness. If you like spicy food, then you will love this recipe! If you aren't too tolerant of spicy foods, I included a slight variation in the notes. Enjoy!
