Ingredients
- 0.5 cups rolled oats
- 0.67 cups Almond Breeze Chocolate Almondmilk
- 2 teaspoons powdered sugar
- 2 teaspoons unsweetened cocoa powder
- 1 tablespoon toasted slivered almonds
- 1 tablespoon mini chocolate chips
- 1 tablespoon flaked coconut

In pint jar or at least 12-ounce glass, mix oats, almondmilk, powdered sugar, and cocoa powder. Cover; refrigerate at least 8 hours or overnight.

To serve, stir mixture and top with almonds, chocolate chips, and coconut.

J-Lyn's Awesome Salmon Casserole
I improvised this salmon casserole with items I had on hand in my pantry. I've never been big on casseroles (if you've had my mom's cooking, you'd understand why), but they are definitely an easy way to use up items that would otherwise be sitting in the pantry forever. Huckleberry Peach Cobbler
This cobbler combines huckleberries and peaches. Blueberries can be substituted if huckleberries aren't available. It's great served warm with vanilla ice cream. This cobbler works great with either fresh or frozen fruits.

This sushi rice recipe is made in an Instant Pot. This simple method always ensures perfectly cooked grains. I tested four different methods before deciding this was the best. Using the Manual function instead of the Rice setting gives the rice a tender bite and separated grains, yet it's still sticky enough to make compact sushi rolls. This recipe yields enough rice for 3 standard sushi rolls.
