This pecan pie is a family favorite. I get many requests to make this for our church bake sales.
Ingredients
- 1 cup white corn syrup
- 1 cup packed brown sugar
- 0.33 teaspoons salt
- 0.33 cups unsalted butter , melted
- 3 large eggs , slightly beaten
- 1 cup chopped pecans
- 1 unbaked pie crust , 9 inch

Preheat the oven to 350 degrees F (175 degrees C).

Mix together corn syrup, sugar, melted butter, and salt in a large bowl. Add eggs and beat until well combined. Pour mixture into the pie crust and sprinkle pecans over top.

Bake in the preheated oven for 50 to 60 minutes.

Remove from the oven and let cool to room temperature before serving.

Italian Tuna Spread
This Italian tuna spread recipe makes a great addition to an antipasti spread. Serve it with crostini, Melba toast, or crackers at room temperature. Store it, covered, in the refrigerator. To reuse, bring it back to room temperature; do not microwave to reheat; it will turn to goop. This also makes the best tuna fish sandwich you will ever have. Use iceberg lettuce, toasted bread, and a thin slice of tomato. Yum!

I had this at a tapas bar in Spain way back and was able to figure out how to mimic it. It's an easy way to clean out the fridge and pantry. And, perfect for a low carb diet. I was introduced to this as a tapa. But you could always pair it with a salad or other veggie side dish for dinner.
