This kohlrabi bread recipe is something different to do in a bread machine with a not-so-used vegetable. I recently signed up for a weekly CSA veggie box, which has introduced me to kohlrabi.
Ingredients
- 1.25 cups peeled and diced kohlrabi
- 0.75 cups fat-free milk
- 2 tablespoons canola oil
- 2 cups bread flour
- 1 cup whole wheat flour
- 1 tablespoon brown sugar
- 1.5 teaspoons salt
- 2 teaspoons dried rosemary
- 2 teaspoons instant yeast , such as SAF-instant

Bring a pot of water to a boil. Add kohlrabi; boil until completely tender, 5 to 7 minutes. Drain.

Transfer kohlrabi to a blender; blend until smooth.

Place milk, kohlrabi, oil, flour, sugar, salt, rosemary, and yeast in a bread machine in the order listed.

Set machine for medium crust on the Basic cycle and press Start.

Mongolian Meatloaf
I could not be more pleased with how this Mongolian Meatloaf experiment turned out. Since I couldn't decide whether to make meatloaf or Mongolian beef, I decided to try both things at once. The result is a tender meatloaf, sliced and crisped in a skillet and served with a sweet, salty, savory sauce, which, like the American Chinese restaurant favorite, Mongolian Beef, is not remotely Mongolian. But it sure is delicious, especially served over steamed rice with bok choy.
