Every time we have a party I'm requested to make this lazy man's pierogi dish. Wonderful mixture of pasta, bacon, mushrooms, and onions.
Ingredients
- 1 package rotelle pasta , 16 ounce
- bacon , chopped
- 2 onions , chopped
- 1 tablespoon unsalted butter
- mushrooms , quartered
- 2 cans condensed cream of mushroom soup , 10.5 ounce
- 1 can sauerkraut , 16 ounce
- salt and ground black pepper to taste

Fill a large pot with lightly salted water and bring to a rolling boil. Stir in rotelle and return to a boil. Cook rotelle uncovered, stirring occasionally, until tender yet firm to the bite, 8 to 10 minutes; drain.

Preheat the oven to 350 degrees F (175 degrees C).

Cook bacon in a large, deep skillet over medium-high heat until evenly browned; transfer to a paper-towel-lined plate. Stir onions into skillet; cook until translucent.

Melt butter in a separate pan. Add mushrooms; sauté.

Combine rotelle, bacon, onions, mushrooms, soup, and sauerkraut; season with salt and pepper. Pour into a 9x13-inch baking dish.

Bake in the preheated oven for 45 minutes.

These toaster pastry cookies mimic the fillings and drizzles of the toaster-pastry breakfast classic with these soft and buttery cookies. If you don't have a 2-inch square cookie cutter, roll dough into a large square or rectangle and use a pizza cutter to cut it into 2-inch squares.

I kind of invented this recipe based on how I make my enchilada sauce. I always want to dip my chips in the sauce, so I turned it into a dip! Serve with tortilla chips and/or Fritos®. It is good in tortillas as well.
Cranberry-Almond Vinaigrette
I got the idea for this dressing from my love for Post Cranberry and Almond Cereal - I thought it was a great flavor combination. I like this dressing over a mixed green salad, potato salad (yes, it actually works) and even grilled salmon or warm roast turkey breast and glazed ham steaks at Christmas. I really love the color of this dressing - whatever it touches looks so pretty.
