Wake-Up Casserole with Canadian Bacon
The original recipe for this casserole with Canadian bacon is delicious, but this is my healthier version with less fat and fewer calories. As a single person, I can't eat eight portions in one sitting, so I wrap portions and freeze them. It's great to have on hand for family visits โ just reheat each person's serving when they show up for breakfast. It's also great if you're in a hurry in the morning and don't have time to cook before heading off to work.
Sauerkraut Casserole
This sauerkraut casserole goes great with German cuisine. The long, low temperature cooking time is imperative to allow the ingredients to caramelize thoroughly.
