Chicken Mango Salsa Salad with Chipotle Lime Vinaigrette
A delicious, colorful, sweet and spicy salad with diced chicken, a mango pico de gallo salsa, blue cheese, and cranberries in a wonderful chipotle lime vinaigrette. It's almost too pretty to eat...almost.
Chocolate-Banana Muffins
I love banana! And these make the ideal treat for supper for the school lunches. They freeze well so double the recipe and try and leave some for the freezer! Store in an airtight container once cooled.
Amazing Apple Crostata
Before eating this apple crostata recipe, you'd think something as simple as apple pie wouldn't be as decadent as this. But you'll soon find you were very, very wrong. I'm not a dessert lover, but I took one of these home from an Italian restaurant famous for their family-style eating. I ate it even after it was all soggy from melted ice cream and savored every morsel.
