Classic Chicken Salad
This crowd-pleasing recipe for classic chicken salad is perfect for sandwiches, salads, and snacking. Bits of celery, relish, and fresh herbs add texture and flavor while Dijon mustard and lemon juice add a tangy bite. Enjoy it just as it is, or add nuts or fruits. My favorite way to eat this is on toasted wheat bread with lettuce and tomato alongside a healthy serving of potato chips!
Cranberry Hummus
Thanksgiving dinner is a lot of work, but a make-ahead Thanksgiving appetizer doesn't have to be. This is a great way to keep your hungry guests happy until the big meal hits the table. Serving suggestions are toasted pita bread wedges, crackers, crostini, or fresh veggies. And if you have any left, use it as a spread on a turkey sandwich.
Chicken Stroganoff-Stuffed Baked Potatoes
Leftover chicken is key to these chicken stroganoff-stuffed baked potatoes, a creamy mushroom and chicken sauce served over baked potatoes. Add a crusty bread and a green vegetable, or a salad. We like it with roasted asparagus that goes into the oven about 20 minutes before the potatoes are done. Don't you love to get double duty from your oven?
