Frosted Zucchini Brownies
This frosted zucchini brownies recipe yields moist and chocolaty brownies. The recipe was my mother-in-law's. She passed away 10 years ago. The first time I made it, my husband and I cried when he said, "This is my mom!" So to honor this special woman (whose five food groups were chocolate chip cookies, chocolate cake, brownies, chocolate candy, and chocolate ice cream), I give you the ultimate brownie recipe!
Lentils And Spinach
This is my own adaptation of an Indian recipe. It doesn't look like much, but it is surprisingly yummy. Serve this for dinner over hot rice or a diced baked potato. Pair with carrots, cauliflower, or a fresh sliced tomato for a full meal.
Bocconcini Salad
Bite-size balls of fresh mozzarella, known as bocconcini, make up this great salad. If possible, seek out mozzarella di bufala, made from water buffalo's milk; a specialty of central and southern Italy, it is a softer, creamier mozzarella than that made from cow's milk.
