Super-easy, fun recipe to whip up in minutes for an October or November breakfast. Love serving this with chili for dinner too. I like spraying the muffin liners so that the muffins don't stick. Just a tiny spray will do!

- 0.75 teaspoons pumpkin pie spice , Optional

Canadian Bacon Breakfast Stack
This is a lightened version of one my favorite breakfasts. Hot pepper sauce is necessity! Sprinkle it over the top before you dig in! Canadian bacon comes from the loin area of the hog so it is very lean and quite tender.
Deep South Fried Chicken
This cast iron fried chicken recipe was my grandmother's and mother's, and it's over 125 years old. I've started a new tradition by serving this fried chicken on Christmas Day.
Scottish Mince Pie
My mother-in-law made this pie in Scotland. It is not a sweet mince pie, but it's easy to make, and a hearty dinner. I serve boiled parsley potatoes and a nice salad with this pie. My children always ask for this pie when they come home to visit.
