Delicious no-bake chocolate oatmeal cookies with peanut butter and cocoa flavor โ all without turning on the oven.
Ingredients
- 2 cups white sugar
- 0.5 cups butter or margarine
- 0.5 cups milk
- 3 tablespoons unsweetened cocoa powder
- 1 pinch salt
- 3 cups quick cooking oats
- 0.5 cups peanut butter
- 1 teaspoon vanilla extract

Bring sugar, butter, milk, cocoa, and salt to a full rolling boil in a saucepan for 2 minutes.

Add quick-cooking oats, peanut butter, and vanilla; mix well.

Working quickly, drop by teaspoonfuls onto waxed paper and let cool.

Belizean Chicken Stew
I learned how to make this chicken stew when I dated a Belizean man for about a year. He is long gone, but I still make his stew, and I love it! This is a very healthy dish, but the limes and the hot sauce make it very flavorful. Serve with corn or flour tortillas. Each person may want to spice it up with more hot sauce as they prefer.
