I came up with these banana pancakes without milk or wheat when a flourless banana pancake recipe I tried was mushy and difficult to flip. I adjusted the recipe and these came out puffy and light like traditional pancakes, though they contain no wheat flour, added sugar, or milk. Kids love the subtle banana flavor, too. Serve with butter and syrup of choice.
Ingredients
- 1 banana
- 2 eggs
- 0.33 cups rolled oats

-
2

-
3
Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat as necessary.

Great summertime snack without the campfire!
Keto Pumpkin Cheesecake with Almond Pecan Crust
This keto pumpkin cheesecake has a nutty almond-pecan crust. It's a yummy and rich-tasting cross between my decades-old cheesecake recipe and pumpkin pie that I converted to be low-carb. I also use low-fat cream cheese to reduce the amount of fat. It's wonderful for Thanksgiving, or just for fun anytime. Unless you tell people it's low-carb, they'll never guess!
Easy Apple Crisp with Pie Filling
This recipe using canned apple pie filling makes a delicious apple crisp. This is my grandmother's recipe that takes no time to make — or eat! Best served warm with whipped cream or vanilla ice cream.
