These chocolate chip muffins are the absolute best!
Ingredients
- 2 cups all-purpose flour
- 0.5 cups white sugar
- 3 teaspoons baking powder
- 0.5 teaspoons salt
- 0.75 cups miniature semisweet chocolate chips
- 1 egg , beaten
- 0.75 cups milk
- 0.33 cups vegetable oil
- 3 tablespoons white sugar
- 2 tablespoons brown sugar

Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper muffin liners.

In a large bowl, combine flour, 1/2 cup sugar, baking powder, salt and chocolate chips. Add egg, milk and oil; stir just until batter is moistened. Spoon batter into prepared muffin cups, filling about 3/4 full.

In a small bowl, stir together 3 tablespoons white sugar and 2 tablespoons brown sugar. Sprinkle sugar mixture over muffins.

Bake in preheated for 20 to 25 minutes, until golden brown. Remove immediately from pan.

Fresh Fruit Salad
I was looking for a light meal for brunch and decided to toss every type of fruit I had in the house into a yogurt-based salad for lunch. It went over well with my lunch guest who is a fussy eater. My sister actually asked for seconds. The nice thing about this is you make what you need at the time and don't have to bother with leftovers. However, it does keep well for a few days as long as it is refrigerated. Serve in individual dishes with crackers.
