A simple Irish scalloped potatoes recipe passed down from my ancestors, using ingredients you have on hand.
Ingredients
- 6 potatoes , peeled and thinly sliced
- 0.5 cups butter , cut into thin slices
- salt and ground black pepper to taste
- 1 pint half-and-half

Preheat the oven to 325 degrees F (165 degrees C).

Arrange potatoes in a 9x13-inch baking dish.

Layer butter slices on top of potatoes. Season with salt and black pepper.

Pour half-and-half evenly over potato mixture.

Bake in the preheated oven until sauce has thickened and potatoes are tender, 45 to 60 minutes.

Seafood Sausage
Seafood sausage is a great, underrated way to take less than thrilling seafood, like some sleepy sole, and previously frozen salmon, and make something that seems far more special. The flavor is lovely, and the texture is similar to a boudin blanc, or white hot dog, if you prefer. You can brown and serve these right after they're done boiling, but I like to make them ahead of time.
Sourdough Blueberry Muffins
I used sourdough discard to make these dense, tangy, blueberry muffins. Active sourdough can also be used, resulting in a fluffier, lighter muffin. Both versions are delicious!
