Garden fresh Swiss chard is quickly cooked with olive oil, garlic, and capers in this quick and easy Italian-inspired pasta meal.
Ingredients
- 0.33 pounds whole wheat spaghetti
- 2 tablespoons extra-virgin olive oil
- 1 clove garlic , minced
- 1 bunch Swiss chard , chopped
- 1 teaspoon capers
- 1 teaspoon lemon juice , Optional
- salt and ground black pepper to taste
- 0.25 cups grated Parmesan cheese , or to taste

Fill a large pot with lightly salted water and bring to a rolling boil. Stir in spaghetti and return to a boil. Cook spaghetti uncovered, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain well in a colander set in the sink.

Meanwhile, heat oil in a large skillet over medium heat. Stir in garlic; cook until softened, 1 minute. Add Swiss chard; cook and stir until chard stems tender. (You can use some of the hot pasta water and cover the pan to help steam the chard.)

Stir hot spaghetti and capers into chard mixture; season with lemon juice, salt, and black pepper. Sprinkle with Parmesan cheese to serve.

Mama's Oh-So-Savory Lamb and Eggplant Casserole
The basis of this lamb and eggplant casserole recipe came from my 4th grade teacher's mother who was Armenian, and I've been making it for over 50 years. It is easy to put together, but the longer the stovetop step simmers, the better the casserole will be when served. The leftovers are yummy! You could serve this over rice, if you like, with a green salad. I just serve it in pasta bowls with crusty bread, butter, and a nice glass of red wine.

This three-olive spread recipe was given to me by a co-worker for the holidays. It is best when made with olives purchased at a deli. Serve it with your favorite crackers, sliced baguette, or thinly sliced Italian bread.
