Gluten-free crêpes are so quick and easy to make, with just a few basic ingredients from your pantry! Great for either sweet or savory recipes.
Ingredients
- 2 cups gluten-free all-purpose flour
- 0.5 teaspoons salt
- 0.5 teaspoons xanthan gum
- 4 eggs
- 1.5 cups milk
- 0.25 cups butter , melted
- 2 tablespoons softened butter , or more as needed for cooking

Combine flour, salt, and xanthan gum in a large bowl; form a well in the center. Whisk eggs and milk together in a separate bowl and pour into the well; mix until slightly combined. Add melted butter and mix until a soft batter is formed, 1 to 2 minutes. Cover and let stand for 45 minutes.

Heat a lightly buttered 8-inch skillet over medium heat. Pour 2 tablespoons batter into the skillet and immediately rotate the skillet to spread batter out in a thin layer. Cook until the top of crêpe is no longer wet and the bottom has turned light brown, 1 to 2 minutes. Run a spatula around the edge of the skillet to loosen crêpe; flip crêpe and cook until the other side has turned light brown, about 1 minute more.

Chocolate Cake Mix Cookies
You can vary this chocolate cake mix cookie recipe. This one uses chocolate cake mix with chocolate chips, but you can use peanut butter chips or raspberry chips and nuts instead. You can also add 1/4 cup of brown sugar. Or you can use another flavor of cake mix and omit the chocolate chips. The cake mix, butter, and egg amounts are the same for all.
Sesame Noodle Salad
This amazing salad recipe was given to me by a friend who used to know someone at the now closed Larry's Markets in the Seattle area. I've added to the recipe a little -- so it's not exactly the same... but better! I take this to every picnic and everyone loves it! May also add diced chicken for a variation.
Blueberry Vinaigrette Dressing
Yummy vinaigrette dressing with a nice richness thanks to some balsamic vinegar and fresh blueberries! I prefer a little less oil for a thicker dressing and my husband prefers a little more oil for a thinner dressing.
