This lemonade, made with fresh pineapple, is tropical and refreshing. I find that in-season pineapples tend to be very sweet, so little or no sweetener is needed. Adjust to taste.
Ingredients
- 1 fresh pineapple
- 4 cups water , divided
- 0.5 cups freshly squeezed lemon juice
- 1 packet sweetener of your choice , or to taste
- 2 cups ice cubes

Core pineapple using a pineapple corer or slicer. Cut into chunks and measure out 2 cups. Reserve any pineapple juice.

Combine 2 cups pineapple chunks, reserved pineapple juice, 2 cups water, and lemon juice in a blender. Blend until smooth and pour into a pitcher.

Add remaining 2 cups water and sweetener to the pitcher. Stir and serve over ice.

Dad's Pad Thai
This is my father's pad thai recipe. It's the best, even better than what you'll find at most Thai restaurants! I like it because it's full of fresh ingredients, it's not greasy, and it's satisfying and healthy. There is no meat in this recipe.

This end product is a little lighter, and the recipe is a little more in-depth then some of the other recipes available. It will allow you to tailor some of the ingredients more to your taste. There have been many variations of this liqueur, but this one is the most accurate to store brands of Irish cream. It is also the most flexible. Store brands do not use Hershey's® chocolate syrup in their recipe. This one should have a better consistency and taste a little more proper to the famous brand 'B' from Ireland if followed directly. You be the judge.
