These croquettes make great use of leftover mashed potatoes. Great for dinner with a garden salad.
Ingredients
- 4 cups mashed potatoes
- 0.5 cups grated Romano cheese
- 2 large eggs
- 2 tablespoons dried parsley
- 2 tablespoons imitation bacon bits
- 1 teaspoon dried onion flakes
- salt and pepper to taste
- 1 cup Italian-style dried bread crumbs
- 1 quart vegetable oil for deep frying

In a large bowl, combine mashed potatoes, cheese, eggs, parsley, bacon bits, onion flakes, salt, and pepper. Form mixture into patties, then dredge patties in bread crumbs.

Pour oil 1/2-inch deep in a large, heavy skillet. Heat oil over medium-high heat.

Fry patties in hot oil, flipping to fry them on both sides until they are golden brown. Serve hot.
