On a quest to get my kids to eat more veggies and not just at dinner time, my recipe for pumpkin French toast has now become a family favorite! Drizzle with maple syrup and sprinkle some confectioners' sugar for fun!
Ingredients
- 4 eggs
- 0.25 cups canned pumpkin purée
- 1 teaspoon ground cinnamon
- 1 pinch ground nutmeg
- 8 slices whole wheat bread
- 2 teaspoons unsalted butter

Beat eggs, pumpkin purée, cinnamon, and nutmeg together in a shallow bowl. Dip bread slices into pumpkin mixture until coated on both sides.

Melt 1 teaspoon butter in a large skillet over medium-high heat. Cook 4 bread slices in the skillet until browned on both sides, about 3 minutes per side. Repeat with remaining butter and bread.
