Soft, cake-like pumpkin pecan white chocolate cookies.
Ingredients
- 1.5 cups dark brown sugar
- 1 cup unsalted butter
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup solid pack pumpkin purée
- 2.25 cups all-purpose flour
- 0.5 teaspoons baking soda
- 0.5 teaspoons pumpkin pie spice
- 10 ounces white chocolate , chopped
- 0.5 cups pecan halves

Preheat oven to 300 degrees F (150 degrees C) Grease baking sheets.

Beat brown sugar and butter together with an electric mixer in a large bowl until smooth. Beat first egg into butter mixture. Beat second egg into mixture along with vanilla extract: stir in pumpkin purée until well blended. Combine flour, baking soda, and pumpkin pie spice in a separate bowl; add to pumpkin mixture. Fold in white chocolate and pecans.

Drop spoonfuls of dough 2 inches apart onto the prepared baking sheets.

Bake in the preheated oven until edges are golden, 20 to 22 minutes. Cool for 5 minutes on baking sheets before removing to a wire rack to cool completely.

I loved this pancake recipe. Way better than a mix at the store but I wanted to cut a little of the fat. I make them with less butter, egg whites instead of a whole egg, and nonfat milk. They are so fluffy and tasty plus I feel great about giving them to my family.
