This recipe is a simple Spanish rice that is quick and easy and tastes delicious. The vegetable juice and the taco seasoning add more flavor to this dish.
Ingredients
- 0.25 cups chopped onion
- 2 cloves garlic , minced
- 2 tablespoons vegetable oil
- 3 cups uncooked instant rice , such as Minute®
- 2.25 cups chicken broth
- 1 cup vegetable juice , such as V8®
- 1.5 teaspoons taco seasoning

Cook and stir onion, garlic, and vegetable oil in a skillet over medium heat until onions are softened, about 5 minutes.

Stir rice into onion mixture and cook, stirring often, until rice becomes slightly opaque, 1 to 2 minutes.

Stir chicken broth, vegetable juice, and taco seasoning into rice mixture and bring to a boil. Cover and simmer over low heat until rice has absorbed most of the liquid, about 5 minutes.

Grandma's Butter Noodles
We call these grandma noodles though this is my late mother-in-law's recipe — her favorite for flavor and because they don't spring back when you roll them. At every family gathering, she'd make the best chicken and noodles, dropping her prepared noodles into homemade chicken broth along with shredded cooked chicken, then serve them over mashed potatoes. I've made them many times and everyone loves them. When making multiple batches, and lacking counter space, I hang the rounds on clean plastic hangers to dry.

Grandma Sony's Slow Cooker Black Beans
My mother-in-law whipped up these slow cooker black beans one day without really paying attention to what she was putting in and served them as a side. I have since had to reverse-engineer them to come up with this slow cooker recipe and found they are extremely versatile. They are excellent in burritos, over rice as a side or main dish, or just as a soup on their own. You can even add cheese to the leftovers to make a great dip for chips!
