- 1 cup butter , plus more for greasing
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups grated zucchini
- 2.75 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1 cup flaked coconut
- 1 cup chopped walnuts
- 1 cup chocolate chips
- 0.5 cups raisins

Preheat the oven to 350 degrees F (175 degrees C). Grease 2 baking sheets with butter.

Beat sugar and 1 cup butter together in a large bowl with an electric mixer until light and fluffy. Beat in eggs and vanilla until smooth; stir in zucchini.

Whisk flour, baking powder, cinnamon, and salt together in a separate bowl; mix into zucchini mixture until well combined. Fold in coconut, walnuts, chocolate chips, and raisins until evenly distributed. Drop dough, about 1 tablespoon per cookie, onto the prepared baking sheets.
