This is a mild, refreshing, and citrusy salad that will wake up your taste buds. A handful of pomegranate arils is also a nice option for garnish.
Ingredients
- 0.33 cups extra-virgin olive oil
- 0.25 cups freshly squeezed orange juice
- 1 teaspoon white wine vinegar
- salt and freshly ground black pepper to taste

Whisk together olive oil, orange juice and vinegar in a small bowl. Season with salt and pepper and set aside.

Cut orange sections in half and add to a large bowl along with romaine lettuce, arugula, olives, and red onion. Toss until well combined.

Drizzle half the dressing over the salad and toss to combine. Garnish with pine nuts. Serve the remaining dressing on the side to be used at the table.

Irish Bread
My mother-in-law was born in Ireland and this is her recipe, which was only shared with the family. My husband would make 20 loaves for St. Patrick's Day to give to friends but he would never give the recipe. When asked for it, he would make the person a loaf and tell them that the recipe was a secret. Now that both he and his mother have passed, I think she would like to share it. I make 4 loaves each year for our church bake sale. They sell for $17.00 each and people come to the early mass just to get one.
