This is a delicious alternative to the usual meatloaf.
Ingredients
- 1.5 pounds ground turkey
- 2 cups dry bread crumbs
- 1 onion , chopped
- 1 egg , beaten
- 1 cup milk
- 0.5 cups balsamic vinegar
- 1 clove garlic , minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1.5 tablespoons chopped fresh rosemary
- 1 cup canned tomato sauce
- 0.75 cups brown sugar
- 1 tablespoon Dijon mustard

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

In a large mixing bowl, mix together the ground turkey, bread crumbs, onion, egg and milk. Season with balsamic vinegar, salt, pepper and rosemary. Press into the prepared pan. Blend together the tomato sauce, brown sugar and mustard; pour evenly over the top of the loaf.

Bake for 1 hour in the preheated oven, or until juices run clear when pricked with a knife.

Scrambled Eggs with Wild Puffball Mushrooms
Puffball mushrooms are an edible species of fungi (calvatia gigante). The fluffy texture and earthy flavor is great in eggs, soups, and quiche. Be careful if you try to harvest wild puffball mushrooms; they can be mistaken for young amanita mushrooms, which can be toxic or downright deadly. To identify: When cut in half, the fungus should be solid and pure eggshell white or light yellow. There should be no outline of a small mushroom inside.
Zoodle Vegetable Bake
Zoodles and broccoli mixed with mushrooms, peppers, and other yummy vegetables topped with fresh mozzarella cheese and then baked altogether create a wonderful veggie casserole that is just busting with flavor. This dish was a little soupy; I just served it using a slotted spoon and it worked perfectly.
