This rum sauce is lovely when served over bread pudding. I use the leftovers to drizzle over vanilla ice cream.
Ingredients
- 0.5 cups sugar
- 1 tablespoon cornstarch
- 2 tablespoons butter
- 1 cup milk
- 3 tablespoons white or dark rum

Mix sugar and cornstarch together in a bowl.

Melt butter in a small saucepan over medium heat. Stir in sugar mixture. Pour in milk and cook, stirring frequently, until mixture begins to boil. Continue cooking, stirring constantly, until thick.

Remove from heat and stir in rum. Serve warm.

I like Veracruz sauce on red snapper, but any white, flaky fish will work for this recipe. Many Veracruz-style fish recipes call for pickled jalapeños, but I think there's plenty of acidity in this from the lime and tomatoes, so I like to use fresh jalapeños instead.
