Grilled Butternut Squash
Grilling butternut squash in slices creates a crispy shell and seals in all the flavor. You don't even need butter or salt and pepper โ great on its own, in salads, or as a side.
Mediterranean Stuffed Swordfish
This Mediterranean swordfish steak stuffed with spinach and feta cheese can be grilled or broiled.
Roasted and Curried Butternut Squash Soup
This is my original recipe and can be either vegetarian or meat based. It also freezes well - just thaw, heat and add cream or yoghurt before serving. It's delicious and well worth the extra steps of roasting and pureeing. Enjoy!
