A simple and easy and oh-so-good shrimp quiche.
Ingredients
- 1 baked pie shell , 9 inch
- 4 ounces small , cooked shrimp, peeled and deveined
- 0.67 cups grated Gruyere cheese
- 2 eggs , beaten
- 1 cup light sour cream
- 1 tablespoon finely chopped green onion
- salt and pepper to taste

Preheat oven to 350 degrees F (175 degrees C).

Spread shrimp evenly across the bottom of the pie crust. Sprinkle cheese over the shrimp.

Stir sour cream, green onions, salt and pepper into the beaten eggs; then pour mixture evenly over the shrimp and cheese.

Bake in a preheated oven for 25 to 30 minutes. Serve warm or cold.

Oeufs cocotte are French baked eggs cooked in cream with ham and cheese. You can make them in individual ramekins or a casserole dish, then bake in a water bath in the oven. Simply delicious served hot with toast or strips of bread to dip in the runny egg yolks.
