This baked oatmeal makes the perfect hands-off breakfast: just pop it into the oven! Made with strawberries, bananas, chocolate chips, and Almond Breeze Almondmilk, you can enjoy this right away or save it for the rest of the week!
Ingredients
- 1 cup mashed banana
- 2 eggs
- 1.5 cups Almond Breeze Unsweetened Vanilla Almondmilk
- 2 tablespoons melted and cooled coconut oil
- 1 teaspoon vanilla extract
- 2.5 cups old fashioned rolled oats
- 1 teaspoon baking powder
- 0.5 teaspoons cinnamon
- 0.25 teaspoons salt
- 0.75 cups strawberries
- 0.33 cups mini chocolate chips

Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x9 pan with nonstick cooking spray.

Mix together mashed banana, eggs, Almond Breeze Unsweetened Vanilla Almondmilk, coconut oil, and vanilla in a large bowl until mostly smooth. Add rolled oats, baking powder, cinnamon and salt until well combined. Gently fold in strawberries and chocolate chips.

Pour mixture into prepared pan and bake until edges start to become slightly golden brown, 25 to 35 minutes.

Don's Friend Tonja's Cousin Toni's Boyfriend's Grandmother's Eggnog
Tonja was born in the 1940's and this is her cousin Toni's boyfriend's grandmother's eggnog, so I'm guessing this is from the mid-1800's and probably dates much earlier. The original recipe called for half milk and half cream, but I use half and half. Delicious and simple, but be warned, Granny apparently liked a kick! I've made it from scratch and with the modern equivalents and it's fantastic either way. Do yourself a favor and use a mixer for everything. Those who like eggnog LOVE this recipe. I never leave a party with leftovers.
Real Strawberry Cupcakes
Most strawberry cake recipes ask you to use artificially flavored gelatin. This one uses only uses fresh ingredients. Also makes a great cake!
