Tofu Parmigiana
Breaded tofu a la parmigiana. You'll just about swear this is eggplant or veal! One of my husband's favorites, and he doesn't even suspect! Serve with a simple crisp green salad, angel hair pasta and garlic bread.
Spicy Mexican Street Corn Salad
This spicy corn salad takes the flavors of elote (authentic Mexican street corn) and turns them into a fun side dish, or you can add tortilla chips and serve it as an appetizer. Garnish with additional cilantro and cotija cheese if desired.
Blueberry Banana Nut Bread
Delicious and moist. It's more like a cake than a bread. Looks as good as it tastes and easy to make. Also great with a little spread of lemon curd.
