These swamp potatoes and sausage are so hearty, full of flavor and comforting. Highly recommended serving alongside crusty bread for soaking in the delicious juices.
Ingredients
- 3 pounds potatoes
- 1 small onion
- 1.5 tablespoons olive oil
- 1 teaspoon kosher salt
- 0.5 teaspoons ground black pepper
- 1.5 teaspoons Cajun seasoning
- 1 pound smoked sausage
- 1 pound fresh green beans
- 1 packet onion soup mix
- 0.5 teaspoons garlic powder
- 0.5 cups butter
Instructions

Add potatoes and chopped onion to the bottom of a slow cooker. Drizzle with olive oil and season with salt, pepper, and Cajun seasoning. Toss to coat evenly.

Layer the sliced smoked sausage and green beans on top. Sprinkle with onion soup mix and garlic powder. Place pieces of butter evenly over the top.

Cover and cook on Low until potatoes are tender and everything is well flavored, 6 to 7 hours, stirring a few times throughout the process and just before serving. Serve warm.

Great British Fry Up
This is the version I make most weekends, especially if there are guests or I've over-indulged with drinks the night before. You can leave out anything you don't have and can include other ingredients such as, black pudding, baked beans (the Heinz UK version) or even scrambled eggs.

The recipe is time-honored and historic, and there are many variations. This updated version uses all butter and a food processor for excellent flavor and easy mixing. The rich yeast dough does not contain sugar, but the sweetness and layering result from well-sugaring the dough and work surface while rolling and folding it several times before cutting and shaping the cookies.
