Mom's Spiced Zucchini Bread
This spiced zucchini bread recipe is super moist and flavorful, loaded with cinnamon, nutmeg, and cloves. I tried several recipes before I asked my mom for her recipe. I get huge zucchini at the farmers' market every Saturday, and this is the perfect use for them. It reminds me of my childhood. The loaves can be frozen and are great as gifts. People love them.
Picadillo Cornbread Casserole
This lively picadillo cornbread casserole just hits the spot and is the perfect vehicle for all your favorite add-ons. Ground beef, olives, raisins, tomatoes, and green chiles combine in a savory, cheesy base under baked cornbread. Top with any combination of chopped tomatoes, sliced avocados, cilantro or parsley, or green onions you have on hand. We love this with a little salad of shredded lettuce and some pico de gallo.
Classic Chocolate Ice Cream Sandwich
These ice cream sandwiches tastes just like the ones purchased from the ice cream truck when you were a child. This recipe makes the soft, sticky, chewy chocolate cookies from scratch and you simply sandwich them with plain vanilla ice cream.
