This sweetest Southern sweet potato pie recipe is a unique one, given to me by my mother. It's quite sweet, with a lighter texture than your typical sweet potato pie. If you like sweet potatoes and have a sweet tooth, this one's for you!
Ingredients
- 2 sweets potatoes
- 2 cups white sugar
- 0.75 cups evaporated milk
- 0.5 cups unsalted butter , melted
- 0.25 cups dark corn syrup
- 2 eggs , lightly beaten
- 3 tablespoons all-purpose flour
- 2 teaspoons vanilla extract
- 1 teaspoon apple pie spice
- 0.25 teaspoons salt
- 1 , 9 inch

Preheat the oven to 350 degrees F (175 degrees C). Line a baking dish with aluminum foil.

Place sweet potatoes in the prepared baking dish. Bake in the preheated oven until easily pierced with a fork and skins loosen, 30 to 45 minutes. Cool potatoes, then peel and discard skins. Transfer potato flesh to a bowl.

Mash potatoes with a potato masher. Beat in sugar, evaporated milk, butter, corn syrup, eggs, flour, vanilla extract, apple pie spice, and salt with an electric mixer until fluffy, about 5 minutes. Pour sweet potato batter into pie crust. Excess batter can be reserved for another use.

Bake in the preheated oven until pie is set and crust is browned, 45 to 50 minutes.
